Crispy Baked Sweet Potato Fries

Ingredients
- 2 medium sweet potatoes (850 g)
- 2 tablespoons of corn-starch or potato starch
- 6 tablespoons of frying oil (e.g., rice oil)
- A handful of chopped parsley
- 1 tablespoon of Ami Spice Herbs
- Optional: A pinch of chili, grated Parmesan
Instructions
- Prepare the sweet potatoes: Peel the sweet potatoes if needed, then cut them into long, thin fries about 1 cm thick. Rinse the fries in cold water and soak them for 30 minutes. Drain and dry thoroughly.
- Coat with oil: Place the dried fries in a large dish. Drizzle with oil and mix thoroughly so that all the fries are evenly coated.
- Season: In a small bowl, mix the corn-starch, and Ami Spice Herbs. Sprinkle the spice mixture over the oiled fries and mix again.
- Bake the fries: Spread the fries on a large baking sheet lined with parchment paper. Make sure the fries do not touch each other. Bake in a preheated oven at 220°C for about 25 minutes, turning them halfway through.
- Grill for crispiness: After baking, switch to the grilling option for the last 5 minutes to make the fries extra crispy.
- Serve: Sprinkle the hot fries with salt (optional) and chopped parsley. Serve immediately with your favourite dipping sauce.
Tips
For even crispier fries, use cornstarch in the seasoning mix and avoid overcrowding the fries on the baking sheet. Salt the fries only after baking for the best texture.
