Beer-Braised Pork Knuckle

Introduction

This is my best recipe for beer-braised pork knuckle! The recipe is simple yet effective, resulting in an incredibly aromatic and delicious dish. The pork knuckles are first boiled with vegetables, then roasted with beer for a rich flavour.

Ingredients for Boiling

  • 2 rear pork knuckles or 3 front ones (total 2700 g)
  • 2 medium carrots (200 g)
  • 1 parsley root (150 g)
  • A piece of celery root (150 g)
  • Half a leek or a medium onion
  • 4 cloves of garlic
  • 5 cups of water
  • Spices: 2 tablespoons of Ami Spice Mix (hot or mild), 2 bay leaves, 1 teaspoon of salt, 1 teaspoon of whole peppercorns

Ingredients for Roasting

  • Boiled pork knuckles
  • 1 tablespoon of liquid honey
  • 1 tablespoon of mustard
  • 1 cup of dark beer
  • 1 cup of reserved cooking broth
  • 3 cloves of garlic
  • Spices: 2 tablespoon of Ami Spice Mix (hot or mild)

Instructions

  1. Prepare the knuckles: Before boiling, use a torch to singe the pork knuckles' skin to remove any remaining bristles.
  2. Cook the knuckles: Place the cleaned knuckles in a 5-liter pot along with the prepared vegetables, bay leaves, Ami Spice Mix (hot or mild), salt, and pepper. Add enough water to cover the knuckles. Cover the pot and bring it to a boil, then simmer for 2 hours.
  3. Prepare the marinade: In a bowl, mix honey, mustard, minced garlic, sweet paprika, salt, cumin, and thyme. Coat the boiled knuckles with this marinade and let them rest for at least 30 minutes, ideally 1 hour.
  4. Roast the knuckles: Place the marinated knuckles in a baking dish. Add 1 cup of the reserved broth and 1 cup of dark beer. Cover the dish and place it in a cold oven. Set the oven to 200°C with top and bottom heating. Bake for 1 hour.
  5. Finish roasting: After 1 hour, remove the cover and roast the knuckles uncovered for an additional 20 minutes, basting them with the sauce every few minutes.
  6. Serve: Serve the roasted pork knuckles with mashed potatoes, a spoonful of mustard, and a side of pickled cucumbers or warm cabbage. Pour the beer sauce over the potatoes for extra flavour.

Tips

You can use the leftover broth to make a delicious barley soup. Add potatoes, pearl barley, and cook until tender for a hearty meal.
